STUFFED GOLD PEPPERS

Ingredients:

·4 Gold Bell Peppers
· ½ cup chopped onion
· ¼ cup diced garlic
· 1 Green Bell Pepper
· 2 pounds of ground meat
· 8 almonds, chopped
· Salt and Pepper
· Extra Virgin Olive Oil
· Shredded Mozzarella cheese
· Rosemary for sprinkling on top.

Directions:

1. Preheat oven to 420 degrees F.

2. Cut tops off bell peppers; remove seeds and membrane.

3. Place the Peppers on a baking pan, and roast them for 15 min.

4. In a medium skillet, heat the olive oil over medium heat. Add the onion, the garlic and the green pepper and cook until tender. Add salt and pepper.

5. Add the chopped almonds and the meat and try to incorporate all the ingredients, let it cook for about 10 to 15 min.

6. Fill the Gold Bell Peppers with the meat mixture and sprinkle the cheese and rosemary on the top.

7. Bake it in the oven for about 20 min.
